Well, if you're going to put the SVT springs I really suggest just replacing the stuts too. In the front you're going to have to remove the spring from the strut anyways and while it's all apart I'd say it's worth it just to replace the whole thing, especially because you can get an entire SVT suspension kit for ~$300 and I believe that includes the 21mm rear bar, which is a nice addition as well.
If you decide to go that route, you can run an array of offsets. The SVT wheels (EAP or otherwise) all have a 49 mm offset which will obviously work great. Those came with 215/45/17 tires from the factory so with that combo you shouldn't rub... even if you tried. I'd say to be safe anything between that 49 - 40 offset should work without issue. Anyone else step in if you think otherwise but that would be my unprofessional .$02.
