Slightly different situation but on track I run 15x7.5 with an effective 30mm offset in the front and the tires poke out of the fenders just a touch. Enough that there would be serious problems with a soft suspension.

you could get away with 16x8 probably if you could find them but fender rolling and camber would likely be necessary.
